Zucchini Bread

Delicious and easy to make.

1-1/4 C. shredded zucchini, packed and liquid squeezed out
3/4 C. Splenda
1/2 C. brown sugar
1/3 C. unsweetened applesauce
1 egg
1 t. vanilla
1 C. flour
1 t. baking powder
1 t. baking soda
1/2 t. salt
1 t. cinnamon

Mix all ingredients well. Pour into a glass, sprayed loaf pan. Bake at 350 degrees for 40-45 minutes.
